Scallopy Shrimp Vodka Recipe

  • 1/2 pound bay scallops
  • 1/2 pound of shrimp
  • 1/2 cup of Cristall® vodka
  • 3 tablespoons of half and half
  • 2 cloves of minced garlic
  • 3 tablespoon of fresh lemon juice
  • 2 tablespoon of diced fresh parsley
  • 2 tablespoon of diced fresh basil
  • 2 tablespoon of chopped scallions
  • 1 tablespoon of olive oil
  • 2 tablespoon of butter
  • Asiago cheese, grated
  • 1/2 cup roasted peppers, chopped
  • Dash of salt and cayenne pepper
  • Linguini pasta

 

Directions:

Rinse scallops and shrimp off and pat dry with paper towels.  Heat 1 tablespoon of oil and butter in a large frying pan.  When oil bubbles, add scallops and shrimp, salt and pepper and cook on each side until golden brown.  After scallops and shrimp are cooked, remove from pan and set aside in a plate.

Remove the pan from the heat, add Cristall® vodka, return pan to medium low heat and add the rest of the ingredients.  Stir and simmer for 5 minutes.  Add back into the pan the sautéed scallops and shrimp and cook until heated through.

Serve over linguini, top with grated Asiago cheese.
